Din-spiration Part 5
The one where we get back on the horse...
Since beginning this self-imposed challenge (about 5 or 6 weeks ago) to plan, make, and eat meals at home, I have been fighting this silly cold/cough. Two trips to urgent care ('cause after hours is when I would finally cry "uncle!") and a recent trip to my doctor, a round of steroids, a round of antibiotics, and lots of over the counter medication later, I'm just now on the mend.

Monday and Tuesday we had the best home cooked meals ever! They were home cooked by someone else!!
On Monday, we had dinner with my daughter and her husband. They put together a lovely baked potato bar that included this absolutely lovely gluten and meat free chili- but don't make it for those reasons. It was just darned good!
Tuesday, another daughter and her husband invited us over for dinner (we could work this system for a while ;)). Our son-in-law's family is Greek and he knows how to cook up some yummy food. I am not even sure what he did to his chicken and homemade fries, but there were lots of spices and feta cheese involved. My favorite part of dinner was the Tiropitas my daughter made for us. They are seriously the most amazing things ever. I don't have her recipe, but just search "Tiropita" and you will see many options for making these fabulous cheese pies.
This is where the "crash" happened. I was not feeling well on the weekend, so did not prep my grocery list and did not have food on hand to make anything. As all the boys were gone on Wednesday, we decided to call it a "date night" and order Door Dash (food delivery). I think we can get a pass for that. BUT on Thursday, when I still wasn't feeling well and we still did not have supplies on hand, we ditched out for burgers.
Friday, feeling better and determined to get back on track, I chose the easiest possible recipe and headed to the grocery store. Even when my daughter called as I was leaving for the store to see if her family could join us for dinner, I continued my resolve and simply doubled the recipe.
I think I get double bonus points here as my husband, feeling like maybe I was taking on too much (still not feeling great), offered to pick up burritos for dinner from a favorite place of ours.
Anyway, onward and upward. I came home and put together this very simple chicken Parmesan dish with a caesar salad and noodles one the side. It hardly counts as cooking but it was hot and yummy!
We reran the chicken parm on Saturday. Fortunately, the kids liked it.
Sunday, we made what I think is quickly becoming a family favorite- spaghetti and meatballs from "Dinner a Love Story". My boys are obsessed.
The good new is that I have a plan for this week - it is in writing! And I have the food to go with the plan.
"Even the worst meal made at home is better than the best meal out!"- said way back when by my then 9/10 year old daughter.
