Din-spiration Part 4

Still at it! So much of success is attitude and planning. It is easy when we are tired and out anyway, to just pick up some quick food. It is much easier to keep a "can do" attitude when you have planned for the week's meals!

This week:

We reran Orange Chicken from Danielle Walker's Against All Grain cookbook. My boys love to eat this one leftover for lunch.

Our first try at making Spaghetti with Shallots and Brussel Sprouts from Jenny Rosenstrach's Dinner the playbook was a huge success. This is a seriously good yet quick and easy meal.

I also baked some potatoes with our Sunday dinner to use with leftovers.

We had a lovely dinners this week using our roasted chicken (previous post), orange chicken, and spaghetti.  To mix things up we added bell peppers to our chicken to make chicken quesadillas. We also used our leftovers to stuff bake potatoes.

For our weekend meals:

Saturday we entertained four grandchildren (ages 6, 4, 1, and 1), so we had hot dogs (the better kind), stinky noodles- noodles with butter and Parmesan (so named by our granddaughter), and lots of cut up for fruits and veggies.


Sunday we had over another daughter, her husband, and their 3 children (ages 6, 3, and 1) with the last minute addition of another daughter and her husband. We made a new family favorite- macaroni and cheese that I found on Patty's blog (Reasons for Chocolate), hot dogs, hamburgers, broccoli, and ice cream sandwiches. 

I've decided that game night is just going to have be "out night". This week I took the boys to get cheeseburgers and fries at Five Guy's Burgers and Fries on the way home from the game. Mark suffered a mild concussion and was very sad that he could not play in the game, so this was his consolation prize. (I'm not above a little food reward;))
