Potato Bacon Casserole

This week I am "Pinning it Down" some cooking, some planning, and a little decluttering! 

I love breakfast casseroles. My boys only love them if they don't have too many ingredients (they don't like bell peppers and such in their breakfast food!). When I saw this one, I knew that it would be a keeper.

Our thoughts on the recipe: 

The recipe tester (who shared the recipe) felt that the cooking time was off as his casserole was a bit under cooked. We used a 9x9 pan instead of an 8x8 and the cooking time was perfect.

My boys (all- dad included) felt that we should have used all the bacon we cooked. We cooked 16 ounces but used the 8 that the recipe called for. I agree that more would be nice, but maybe not that much more.

I have never made a breakfast casserole that called for evaporated milk and 1 egg rather than several eggs and a little milk. While I really did enjoy this casserole, I missed some of the tasty egg goodness that usually comes with a breakfast casserole. I am thinking on this one.

What I love about this recipe- it is super simple. If I cooked the bacon the day before (see this cool pin for an easy way to do that), it would take just minutes to put  together.

*Note on the ingredients- we used green onion instead rather than onion.

Keeping up on the laundry and meal planning have been my marriage long struggle (31 years- ya think I would have figured it out!) This form won't help with laundry, but I have 4 weeks of dinners planned. I am going to add in breakfast and lunch later. I plan to rotate those 4 weeks and maybe add in another week or two eventually. 

I also pinned this 2012 Declutter Calendar. There is one quick task for each day. I was encouraged to try this when I saw that one day was "clean the right side of your dresser"- the left and center were on separate days. If I miss a day, I can easily make it up. I began a this a few weeks in, so I do the item for the day that I am on and then go back to do a day I missed if I have time. There are so many of these types of things out there, but this one fits perfectly with my "Flylady" training.

  5. Ahh...another Flylady! I used to follow that program. I really should get back to it. It worked great. That breakfast casserole looks really good.
