Making it Count::Fried Rice
Fried rice is pretty much a staple around here. We were introduced to it at a friend's house years ago (go figure- I had never heard of such a thing before that!). We mostly take leftover rice, any leftover meat (steak, ham, or chicken), leftover or frozen vegetables, and a few eggs- stir it together in a frying pan (fried rice- right?). We add just a touch of soy sauce. Those who love soy sauce add more to their liking after it is served.
I found this recipe from Misty's Morning a while back- it includes grated carrots which I find my kids prefer over chunks and BACON (which I have yet to try, but I plan to).
Not our prettiest fried rice, but yummy none-the-less!
