Trying New (Easy) Recipes

First up... Healthy Chicken Nuggets! Sadly, I have no pictures. But, trust me, they are beautiful. This is one of those rare recipes that actually cooks up and looks exactly as the recipe claims. I was a bit suspicious when "pickle juice" was listed as an ingredient... but no worries! They don't taste a thing like pickles. And leftover nuggets make a great lunch the next day.

I have looked forward to trying these sausage bites from Plain Chicken blog, and the super bowl seemed like the perfect occasion. With three simple ingredients, I was totally up for this. You just combine sausage and cheese to make sausage balls, and then place each one in a little biscuit cup (using a mini-muffin tin). I was not able to purchase Grands Jr. biscuits called out in the original recipe, but managed to get by with using the regular ones. I just cut each biscuit in fourths and rolled each fourth in to a small circle (I tried just pressing, but rolling actually turned out to be faster).


The learning curve- while these couldn't be easier, I will only make them at home from now on. I made them and transported them warm to the party. While they were still good, they were not nearly as wonderful as when they came out of the oven piping hot. Even reheated, they just didn't have that original umph. Another note to self- I want to try precooking the sausage balls for a few minutes next time. I was a little insecure about the cook time due to worries about the meat being under-cooked   I will keep these on our "fun foods" list to make for a movie night or when we have friends over for "finger foods". 


This next one was a fail... I don't know if it is just us, but these no bake cocoa cookies just did not work. I think in large part due to the fact that we have a similar recipe that calls for a ton of sugar. The banana taste of these did not sit well with my boys. In Paul's (14yo) words, "they taste like a toddler snack" (thinking it tasted like something his 3yo nephew would like). I am not saying don't try- just that my boys were not overly enthused about it. I originally pinned it from here and you can go here to see the recipe for yourself.
